Hash Brown Quiche

Ingredients

  • 800g Jack’s hash browns
  • 1 bag Jack’s grated mature cheddar cheese
  • 6 Jack’s eggs
  • 250ml milk
  • 2 tsp Dijon mustard
  • ½ red onion, roughly chopped
  • Sea salt and freshly ground black pepper
  • 2 tsp fresh thyme leaves

Method

  1. Preheat the oven to 210°C, fan 190°C, gas mark 7.
  2. Line the base of a square/rectangular ovenproof dish.
  3. Layer the hash browns in to the dish, covering the base and sides.
  4. Scatter half the cheese over the “base” hash browns.
  5. Place in the oven to bake for 10 minutes.
  6. Whisk the eggs, milk and mustard together until smooth.
  7. Stir in the cheese and onion, and season with salt and black pepper.
  8. Pour the mixture onto the hash brown lined dish.
  9. Scatter the thyme over the top.
  10. Bake in the oven for 40 minutes until set, risen and golden brown.
  11. Serve hot or cold.
