Preheat a grill until hot and toast the crumpets until golden. Alternatively, toast the crumpets in a toaster until golden.
Mix the mascarpone cheese with the strawberries. Add half the honey and pistachio nuts and stir well.
Place the crumpets on a serving plate and divide the mixture between them.
Drizzle each crumpet with the remaining pistachios and honey. Serve straight away.
