Smoky Pork Corn & Chickpea Fajitas

Ingredients

  • 1 tbsp olive oil
  • 500g pork steaks, trimmed of fat and cut into thin strips
  • 1 x red pepper, deseeded and diced
  • 1 x Old El Paso Original Smoky BBQ Fajita Dinner Kit*
  • 1 x 198g Green Giant Original tinned sweetcorn, drained
  • 1 x size tinned chickpeas, drained and rinsed
  • salad leaves and sour cream to serve

Method

  1. Heat the oil in a large frying pan and cook the pork over a medium heat for 3-4 minutes until browned and fully cooked.

  2. Add the pepper and cook for 2 minutes. Stir in the Old El Paso Original Smoky BBQ Fajita Spice Mix, sweetcorn and chickpeas. Stir-fry until everything is coated in the mixture, approx. 2 minutes.

  3. Warm the Old El Paso Soft Flour Tortillas, following the instructions on the pack.

  4. To serve, take an Old El Paso Soft Flour Tortilla, add some salad leaves and a spoonful of the pork mixture. Top with Old El Paso Mild Original Salsa and sour cream. Roll them up and enjoy.
