Avocado Chopped Bean Salad Recipe


  • 2 limes, zested and juiced
  • 1 tsp ground cumin
  • 1 tbsp runny honey
  • 2 tbsp extra virgin olive oil
  • Sea salt and freshly ground black pepper
  • 1 x 400g tin kidney beans, drained and rinsed
  • ┬Ż cucumber, halved lengthways then sliced
  • 250g cherry tomatoes, halved and quartered
  • 1 x 340g tin sweetcorn, drained and rinsed
  • 1 bunch spring onions, roughly chopped
  • 2 avocados, peeled, stoned and sliced
  • 1 small bunch coriander, roughly chopped


  1. Zest and juice the limes straight into a large bowl, add the ground cumin, honey, olive oil, salt and black pepper and mix together until combined.

  2. Add all the other ingredients and toss together until coated in the dressing.

  3. Serve straightaway.
