Baked Pilau Rice With Feta

Ingredients

  • 150g basmati rice
  • ½ bunch spring onions, roughly chopped
  • 200g tinned mandarins, drained and juice reserved (about 100ml)
  • ½ x vegetable stock cube, made up with 200ml boiling water
  • 2 tbsp roughly torn mint leaves
  • 2 tbsp coriander, roughly chopped
  • 100g feta, crumbled
  • Freshly ground black pepper
  • 2 tbsp olive oil

Method

  1. Preheat the oven to 220C, fan 200C, gas mark 8.

  2. Tip the rice, spring onions, mandarin juice and vegetable stock into a deep sided ovenproof dish and mix until combined.

  3. Cover with foil tightly, then place in the oven to bake for 25-30 minutes until the rice is just tender and the liquid absorbed.

  4. Remove and allow to sit for 5 minutes before uncovering.

  5. Meanwhile, tip the mint, coriander, mandarins and feta into a bowl, add a little olive oil and season with black pepper. Toss gently together.

  6. Remove the foil and run a fork through the rice to separate the grains. Pile the salad onto the rice, drizzle with the last of the olive oil.
