BBQ Spatchcock Chicken

Ingredients

  • 1 whole Jack’s chicken
  • 1 lemon, zested and juiced
  • 2 garlic cloves, crushed
  • 4 sprigs thyme, leaves separated
  • 2 tbsp olive oil
  • 4 baking potatoes

Method

  1. Place the chicken, breast side down, onto a chopping board.
  2. Using sharp heavy duty scissors, cut through the flesh and bone along both sides of the backbone about 5cm/2 " wide.
  3. Cut from the tail end to the head end then lift out the backbone.
  4. Place the chicken flesh side down onto the board and press as flat as possible.
  5. Make slashes in each of the breasts and legs.
  6. Drizzle the chicken with the oil, salt, pepper, lemon zest and garlic then add the thyme in the cuts.
  7. If you have time, leave to marinate for 30 minutes.
  8. Cook on the BBQ for 20-25 minutes until piping hot and cooked through.
  9. Serve with jacket potatoes, cooked on the bbq/in the oven according to packet instructions.
