Beef Kofta Recipe

Ingredients

  • 500g 15% fat minced beef
  • 1 garlic clove, finely chopped or grated
  • 1 tbsp ground cumin
  • 1 tbsp ground coriander
  • ½ tsp ground cinnamon
  • 1 egg
  • 2 tbsp flat leaf parsley, roughly chopped
  • Sea salt and freshly ground black pepper
  • 2 oranges, zested and juiced
  • 150g couscous
  • 2 red peppers, seeded and finely chopped
  • ½ cucumber, seeded and finely chopped
  • 200g natural yoghurt
  • 1 tbsp chilli sauce
  • 2 tbsp mint leaves, finely shredded

Method

  1. Tip the beef into a bowl with the garlic, cumin, coriander, cinnamon, egg, parsley and juice and zest of 1 orange. Season with salt and black pepper then mix really well with your hands, squishing it together until evenly mixed.

  2. Divide in half then half again, then divide each section into 6 and roll into balls.

  3. Place onto a baking tray into the oven and roast for 15 minutes until brown and cooked through.

  4. Meanwhile, tip the couscous into a heatproof bowl, season with salt and black pepper, then add the orange zest and juice and pour enough boiling water over the top to just cover by 1cm. Stir well then cover with clingfilm and set aside for 10-12 minutes.

  5. Remove the cling film and fluff up the couscous with a fork. Stir in the peppers, cucumber and mint leaves and mix well.

  6. Serve the meatballs with the couscous, then drizzle with the yoghurt and chilli sauce
