How to make Cat's Tongue Biscuits - What is Chocolate Langues de Chat?

Ingredients

  • 125g butter, softened
  • 125g icing sugar
  • 125g plain flour
  • 1 tbsp vanilla extract
  • 3 large egg whites
  • 100g dark chocolate chips, or roughly chopped
  • 1 tbsp sprinkles

Method

  1. Grease and line 3 baking sheets.

  2. Tip the butter and icing sugar into a bowl and beat until soft and light.

  3. Beat in the flour and vanilla extract then add the egg whites. Beat until the mixture forms a smooth batter.

  4. Transfer to a piping bag and pipe the mixture into straight lines, about 1cm wide and 7cm long, making sure there’s a gap of at least 4cm between each one.

  5. Place in the fridge to chill for at least 20 minutes and preheat the oven to 180°C, fan 160°C, gas mark 4.

  6. Place the trays into the oven and bake for 10 minutes until light golden brown and just set. Allow to cool on the baking tray until totally cold.

  7. Meanwhile, tip the chocolate into a bowl and heat in the microwave for 90 seconds until just melted – stir then repeat in 20 second bursts until totally melted.

  8. Drizzle the chocolate over half of each biscuit then scatter the sprinkles over the top.

  9. Allow to set totally before storing in a sealed container until needed.
