Desserts Biscuits - Chocolate Langues De Chat

  Ingredients
- 125g butter, softened
- 125g icing sugar
- 125g plain flour
- 1 tbsp vanilla extract
- 3 large egg whites
- 100g dark chocolate chips, or roughly chopped
- 1 tbsp sprinkles
Method
- 
	Grease and line 3 baking sheets. 
- 
	Tip the butter and icing sugar into a bowl and beat until soft and light. 
- 
	Beat in the flour and vanilla extract then add the egg whites. Beat until the mixture forms a smooth batter. 
- 
	Transfer to a piping bag and pipe the mixture into straight lines, about 1cm wide and 7cm long, making sure there’s a gap of at least 4cm between each one. 
- 
	Place in the fridge to chill for at least 20 minutes and preheat the oven to 180°C, fan 160°C, gas mark 4. 
- 
	Place the trays into the oven and bake for 10 minutes until light golden brown and just set. Allow to cool on the baking tray until totally cold. 
- 
	Meanwhile, tip the chocolate into a bowl and heat in the microwave for 90 seconds until just melted – stir then repeat in 20 second bursts until totally melted. 
- 
	Drizzle the chocolate over half of each biscuit then scatter the sprinkles over the top. 
- 
	Allow to set totally before storing in a sealed container until needed.
