Caribbean BBQ Prawns Recipe

Ingredients

  • 125g microwaveable basmati rice
  • 125g microwaveable brown basmati rice
  • 160g roasted red pepper, finely chopped
  • 1 red onion, finely chopped
  • 2 tbsp coriander, roughly chopped
  • 2 tsp fresh thyme leaves, roughly chopped
  • 1 orange, zested and juiced

Method

  1. Tip the rice into a bowl, then add the all the remaining rice ingredients and stir well.

  2. Cover with a piece of kitchen paper and place in the microwave. Heat on high for 4 minutes until hot through then stir well.

  3. Meanwhile, heat a frying pan until medium hot. Add the oil and the onion and fry for 3 minutes over a medium heat until softened.

  4. Turn the heat up and add the prawns and BBQ sauce and cook for 3-4 minutes until coloured and hot through.

  5. Add the lime zest, juice and coriander and cook for another minute.

  6. Tip the rice into a serving bowl and serve alongside the prawns.
