Cheese & Rosemary Biscuits | Christmas Cheese Snacks

Ingredients

  • 175g plain flour
  • 1 tsp sea salt
  • Freshly ground black pepper
  • ¾ tsp smoked paprika
  • ½ tsp dried rosemary
  • ½ tsp onion powder
  • 150g butter, roughly chopped
  • 125g grated mature cheddar cheese
  • 25g finely grated parmesan
  • 1 egg

Method

  1. Preheat the oven to 180°C, fan 160°C, gas mark 4.

  2. Sift the flour into a large bowl. Add the salt, pepper, paprika and rosemary and stir together.

  3. Add the butter and rub together with your fingertips until it forms a breadcrumb like texture.

  4. Stir in the cheeses and rub together until the cheese breaks down, then make a well in the centre of the mixture.

  5. Crack the egg into the well then gradually draw the dry mixture into the egg and continue mixing until it forms a soft dough.

  6. Lightly dush the work surface with flour then roll the dough out to about 5mm thick.

  7. Cut into whatever shapes take your fancy – stars, Christmas trees, oak leaves, etc. If you have cutters you can use them too.

  8. Carefully transfer to a lightly greased baking tray and bake in the oven for 12-15 minutes until golden brown. Leave to cool totally on the tray before transferring to an airtight container until ready to serve.
