Chicken Ceasar Lettuce Wrap

Ingredients

  • 1 head iceberg lettuce, leaves kept whole but separated – 3 leaves per wrap
  • Sea salt and freshly ground black pepper
  • 150g cooked chicken breast
  • 40g croutons
  • 4 rashers cooked streaky bacon, crumbled
  • 2 spring onions, finely sliced
  • 25g parmesan, peeled into slivers
  • 2-3 tbsp Ceasar dressing

Method

  1. Stack 3 whole iceberg leaves into a bowl like shape.
  2. Season with salt and black pepper.
  3. Add the chicken, croutons, bacon, spring onions and parmesan.
  4. Top with the Ceasar dressing.
  5. Lay onto parchment paper and wrap tightly to secure.
  6. Eat straightaway or place in the fridge until needed.
  7. Cut in half to serve.
