- 100ml caster sugar
- 100ml cold water
- 200g dark chilli chocolate, roughly chopped
- 1 tbsp vanilla extract
- 100ml vodka
Place the sugar and water into a small saucepan and bring to the boil over a medium heat. Stirring occasionally, simmer until the sugar has melted.
Remove from the heat, stir in the vanilla and chopped chocolate and whisk until smooth.
Add the vodka and stir through.
Half fill a cocktail shaker with ice, then pour the chocolate mixture over and shake well until cool.
Strain straightaway and pour into tumblers half filled with ice.
(alternatively, don't shake over ice and just serve hot)
