Christmas Slaw


  • 200g sprouts
  • 1 red onion
  • ┬Ż small red cabbage
  • 1 small head of fennel
  • 2 medium carrots
  • Small handful chopped parsley
  • 2tbsp olive oil
  • Juice of a lemon
  • 1tsp Dijon mustard


  1. Finely chop the red onion, red cabbage and fennel. If you have a food processor with a shredder, use that for ease.

  2. Remove the outer leaves of the sprouts and discard. Shred the sprouts and mix with the other ingredients. Grate the carrot on the course part of your grater and mix with the vegetables.

  3. In a small bowl mix the olive oil, lemon juice and Dijon mustard and pour over the vegetables. Mix in the parsley, season with a little salt and pepper.
