Corned Beef Hash With Fried Egg

Ingredients

  • 1 x 560g tinned potatoes, drained
  • 1 tbsp vegetable oil freshly ground black pepper
  • 1 x 340g tin corned beef, cut into 3cm large chunks
  • ½ bunch spring onions, roughly chopped
  • 4 eggs
  • 40g brown sauce

Method

  1. Tip the potatoes onto a board and squash gently with the side of a knife. Drizzle over half the oil and plenty of black pepper, then toss to combine.

  2. Tip into the air fryer and set onto MAX CRISP for 10 minutes, tossing half way through.

  3. Add the corned beef and ¾ of the spring onions on top. Set back to MAX CRISP for another 4-5 minutes until everything is hot through and crispy.

  4. Meanwhile, heat a frying pan until hot. Add the remainder of the oil and fry the eggs, to your liking.

  5. Divide the hash between serving plates, drizzle the brown sauce over the top, then lay the fried egg on top and scatter the remaining spring onion on top. Finish with a little more black pepper and serve straightaway.
