Cottage Cheese Flatbread


  • 250g cottage cheese
    2 large eggs
  • 1 pack chives, roughly chopped
  • 2 tbsp grated parmesan
  • ¼ tsp chilli powder


  1. Preheat the oven to 190°C, fan 170°C, gas mark 5.
  2. Tip all the ingredients into a blender and blitz to a smooth puree.
  3. Pour into a lined tray.
  4. Bake in the oven for 30 minutes until set and golden brown.
  5. Remove and allow to cool for 10 minutes.
  6. Cut into pieces, stuff with your favourite sandwich fillings and fold over.
  7. Eat!
