Crispy Aubergine


  • 2 aubergines
  • 40g plain flour
  • 2 eggs
  • 1 pack Walkers Sensations sweet chilli crisps
  • 60ml vegetable oil
  • 1 pack Jack’s houmous
  • ½ pack Florette Crunchy Side Salad


  1. Prick the aubergines with a fork.
  2. Roast in the air fryer on high for 15 minutes until really soft.
  3. Place in a bowl, cover with cling film and leave to steam for 5-10 minutes.
  4. Tear the skin from the flesh and discard, keeping the aubergine intact.
  5. Press the whole aubergines into the flour then egg.
  6. Crumple the crisps into a small pieces.
  7. Press into the crisps until totally covered.
  8. Heat a frying pan until medium hot, add the oil and coated aubergines.
  9. Fry on each side for 2-3 minutes until crispy and hot through.
  10. Divide the houmous between 2 plates.
  11. Top with the salad and crispy aubergine.
