Croque Monsieur


  • 50g softened butter
  • 1 tbsp plain flour
  • 150ml milk
  • Sea salt and freshly ground black pepper
  • 100g extra mature cheddar cheese, grated
  • 100g Jack’s grated mozzarella
  • 4 slices white bread
  • 2 tbsp mustard
  • 2 slices ham


  1. Tip 15g butter, flour and milk into a saucepan.
  2. Bring to the boil, stirring constantly until thickened.
  3. Stir in half the cheeses and mustard then season with salt and black pepper.
  4. Heat until smooth then set aside.
  5. Spread bread with remaining butter on each side.
  6. Spread mustard on 2 slices then top with ham.
  7. Sprinkle rest of the cheeses over the top and top with another buttered slice of bread.
  8. Place in air fryer at 200°C for 5 minutes, then turn over and cook for another 2 minutes.
  9. Remove and top with the cheese sauce.
  10. Return to the air fryer and cook for 3-4 minutes until golden and bubbling.
