Crumpets with Strawberries


  • 4 crumpets
  • 150g mascarpone cheese
  • 250g strawberries, washed and hulled
  • 1 tbsp runny honey, plus extra to drizzle
  • 2 tbsp pistachio nuts, chopped


  1. Preheat a grill until hot and toast the crumpets until golden.  Alternatively, toast the crumpets in a toaster until golden.

  2. Mix the mascarpone cheese with the strawberries. Add half the honey and pistachio nuts and stir well.

  3. Place the crumpets on a serving plate and divide the mixture between them.

  4. Drizzle each crumpet with the remaining pistachios and honey.  Serve straight away.
