Fish & Vegetable Parcels

Ingredients

  • 100g butternut squash, peeled and cut into thin strips
  • ½ large courgette, cut into thin strips
  • ½ red onion, finely sliced
  • 100g frozen mixed vegetables
  • 2 x 75g frozen white fish fillet, boneless and skinless
  • 2 tsp pesto
  • Sea salt and freshly ground black pepper

Method

  1. Lay 2 large rectangles of greaseproof paper onto a work surface and divide the sweet potato, courgette and red onion between them, placing them into the centre of the paper.

  2. Divide the frozen vegetables between the piles then place the frozen fish on top.

  3. Season with salt and black pepper then drizzle the pesto over the top of the fish.

  4. Fold the paper over to create a parcel, folding the edges over to seal.

  5. Place them all on a plate into a microwave - heat on high for 10 minutes until the fish is cooked through and the parcels have expanded. The parcels should be very hot to touch.

  6. Place onto serving plates and leave to rest for 1 minute before opening - the residual heat will finish cooking the fish.
