Garlic Hummus Dip recipe UK

Ingredients

  • 1 bulb garlic, top trimmed
  • 1 x 400g tinned chickpeas, drained and 90ml chick pea water reserved
  • ½ lemon, zested and juiced
  • 1 tsp ground cumin
  • 2 tsp ground coriander
  • ½ tsp sea salt
  • Freshly ground black pepper
  • 2 tbsp extra virgin olive oil

Method

  1. Preheat the oven to 220C, fan 200C, gas mark 7.

  2. Wrap the garlic bulb in a piece of tin foil and place in the oven to roast for 20 minutes while you prepare the dips.

  3. Tip all the remaining ingredients for the hummus into a food processor and blitz to a fine puree. Leave there until the garlic is ready.

  4. Cut the tip from the roasted garlic and squeeze the garlic out into the processor and blitz once more until incorporated.

  5. Decant into a serving bowl and serve with crackers, breadsticks, crudités and crisps.
