Halloumi Doorstop


  • 1 pack (250g) Jack’s coleslaw 
  • 2 tbsp chilli sauce
  • ½ bunch roughly chopped coriander
  • 2 tsp olive oil
  • 2 packs (250g) halloumi, cut in half and patted dry
  • 4 tbsp runny honey
  • ½ tsp chilli powder
  • 2 demi baguettes, halved
  • 1 small handful rocket leaves
  • Freshly ground black pepper


  1. Tip the coleslaw into a bowl. Add the coriander stalks, chilli sauce and the coriander leaves and stir well.
  2. Stir the remaining chilli sauce into the honey.
  3. Heat a frying pan until hot. Add the oil and halloumi and fry on each side for 1-2 minutes until golden brown and hot through.
  4. Remove and add the honey and chilli powder and heat through.
  5. Divide the rocket between the baguettes.
  6. Top with the coleslaw, halloumi and some hot honey. 
  7. Season with black pepper.
  8. Cover with the rest of the baguette and serve.
