Jazzed up Brussels Sprouts


  • 200g Brussel sprouts
  • 1tbsp olive oil
  • 20g butter
  • 3 garlic cloves, sliced
  • 100g smoked bacon or pancetta
  • 20g flaked almonds


  1. Prepare the sprouts by trimming off a little of the stork and remove the outer leaves. Once you have done that roughly shred the sprouts and pop into a bowl.

  2. Chop the smoked bacon or pancetta into little cubes.

  3. Place a frying pan over a medium heat add the olive oil and cook the smoked bacon until it begins to crisp. Add the garlic and flaked almonds and continue cooking for 2-3 minutes.

  4. Add the sprouts and mix well into the rest of the ingredients, cook for 1-2 minutes.

  5. Add a splash of water and pop a lid on leaving the sprouts to steam for 2 minutes. Season with salt and milled pepper and serve.
