Serves : 4-6
Preparation Time: 5 minutes, Chilling Time - 2 Hours
- 1 litre fruit juice
- 2 sachets gelatine powder
- Selection mixed berries
- 200ml double cream, lightly whipped
- Small saucepan
- Electric whisk
Pour the fruit juice into a small saucepan and bring to the boil. Add the gelatine powder and whisk into the hot juice.
Continue to heat until totally dissolved, stirring occasionally.
Pour into a selection of glasses or jam jars and place in the fridge until set - at least 2 hours.
Decorate the jelly with mixed berries and good dollop of cream.
