King Prawn Stir Fry

Ingredients

  • 3 tbsps sesame oil
  • 1 large garlic clove, peeled and sliced
  • thumb size piece of ginger, peeled and finely chopped
  • 1 red chilli, de-seeded and finely sliced
  • 1 yellow pepper de-seeded and sliced
  • 1 carrot, peeled and cut into thin strips
  • 150g cooked King prawns, de-frosted if frozen
  • 2 tbsp light soy sauce
  • 200g young spinach, washed
  • juice of ½ lime
  • 2 spring onions, sliced
  • 25g cashew nuts, toasted
  • serve with long grain rice

Method

  1. Heat 1 tbsp of oil in a wok or in a large frying pan until hot. Add the garlic, ginger and chilli and stir fry for 1-2 minutes or until the garlic is golden. Remove from the wok or frying pan and set aside.

  2. Heat the remaining oil. Add the pepper and carrots and stir fry for 1-2 minutes. Toss in the prawns and stir fry for a further 1-2 minutes or until just starting to turn golden. Add the soy sauce and half the spinach and cook until wilted. Add the remaining spinach and stir fry until just wilted. Add the lime juice, garlic, ginger, chilli, spring onions and cashew nuts and toss to combine. Serve straight away with rice.
