Mash Muffins

Ingredients

  • 400g cold mashed potato
  • 2/3 pack Jack’s grated mature cheddar cheese (120g)
  • ½ bunch spring onions, roughly chopped
  • 1 egg
  • 2 heaped tsp whole grain mustard
  • Sea salt and freshly ground black pepper

Method

  1. Preheat the oven to 220°C, fan 200°C, gas mark 8.
  2. Tip all the ingredients into a bowl and mix together until a smooth as possible.
  3. Divide between a greased 6 hole bun tin/small baking dish.
  4. Bake in the oven for 15 minutes until golden brown and piping hot.
  5. Serve hot or cold.
