Leftover Pudding


  • 900ml vanilla ice cream
  • 100ml alcohol – brandy/whisky/spiced rum
  • 300g crumbled leftover Christmas pudding


  1. Remove ice cream from freezer for 10 minutes to soften

  2. Tip into large bowl

  3. Add alcohol of choice (if using)

  4. Add crumbled Christmas pudding

  5. Mix to combine

  6. Return to freezer and freeze until solid

  7. Scoop and serve in balls
