Lemon, Garlic & Rosemary Chicken Breasts

Ingredients

  • 1 lemon, zested and juiced
  • 2 garlic cloves, finely grated
  • 2 sprigs Rosemary, leaves picked and finely chopped
  • 2 tbsp olive oil
  • Sea salt and freshly ground black pepper
  • 4 boneless and skinless chicken breasts
  • 1 bag mixed salad to serve

Equipment

  • Mixing bowl
  • Large frying pan
  • Dinner plate to serve

Method

  1. Put the lemon zest, juice, garlic, rosemary and olive oil into a bowl large enough to hold the chicken breasts and mix together. Season with salt and black pepper.

  2. Slice the chicken breasts in half widthways then open out like a book.

  3. Place into the marinade and mix around until they are all coated then cover and set aside for no more than 30 minutes - any longer and the lemon juice will make the chicken tough.

  4. Heat a BBQ until hot but then let the flames die down or a large frying pan until medium hot, add the chicken breasts 2 at a time and fry for 2-3 minutes on each side until golden brown and cooked through.

  5. Repeat with remaining chicken then serve with a mixed salad.
