- 1 red onion, finely sliced
- 1 lemon, juiced
- 1 x 250g pack ready to eat Puy Lentils (Merchant Gourmet)
- 2 tbsp olive oil
- 2 tsp balsamic vinegar
- Sea salt and freshly ground black pepper
- 80g rocket
- 3 nectarines, stoned and cut into wedges
Tip the red onion into a bowl, squeeze the juice of the lemon over the top and mix well.
Set aside to pickle while you prepare the salad.
Tip the lentils into a serving bowl, add the olive oil, balsamic vinegar, salt and black pepper and toss really well until all the lentils are coated in the dressing.
Add ¾ of the rocket and nectarines and toss gently together then top with the pickled onions and remaining rocket and serve.
