LENTIL, NECTARINE AND ROCKET SALAD RECIPE

Ingredients

  • 1 red onion, finely sliced
  • 1 lemon, juiced
  • 1 x 250g pack ready to eat Puy Lentils (Merchant Gourmet)
  • 2 tbsp olive oil
  • 2 tsp balsamic vinegar
  • Sea salt and freshly ground black pepper
  • 80g rocket
  • 3 nectarines, stoned and cut into wedges

Method

  1. Tip the red onion into a bowl, squeeze the juice of the lemon over the top and mix well.

  2. Set aside to pickle while you prepare the salad.

  3. Tip the lentils into a serving bowl, add the olive oil, balsamic vinegar, salt and black pepper and toss really well until all the lentils are coated in the dressing.

  4. Add ¾ of the rocket and nectarines and toss gently together then top with the pickled onions and remaining rocket and serve.
