Serves : 4 or 8 if Sharing
Preparation Time: 5 minutes
- 75g caster sugar
- 75ml water
- 200g dark chocolate, roughly chopped
- 1 pinch sea salt
- 12 meringue nests
- 250g chocolate ice cream, softened
- 250g strawberry ice cream, softened
- Selection of fresh berries to decorate
- Small saucepan
- Side plate or small dinner plate
Place the sugar and water into a small saucepan and simmer until the sugar has dissolved.
Remove from the heat, then add the chopped chocolate and stir well until the sauce is smooth. Season with a tiny pinch of salt and stir well.
Set aside while you assemble the meringues.
Place one meringue nest onto 4 separate serving plates then top each one with a dollop of chocolate ice cream.
Place a second meringue nest on top of each one then repeat with a dollop of strawberry ice cream.
Top with the last of the meringues and a generous glug of chocolate sauce.
Decorate with fresh berries and serve the rest of the chocolate sauce alongside.
