Simple Spaghetti and Meatballs Recipes

Ingredients

  • 1 tbsp olive oil
  • 400g sausages, skin split and removed, then formed into small 3cm balls
  • 1 onion, roughly chopped
  • 1 tbsp dried mixed herbs
  • 1 x 400g tin tomato soup
  • 1 x 400g tinned chopped tomatoes
  • 300g spaghetti, broken in half
  • 2 tbsp roughly chopped basil
  • 2 tbsp grated parmesan, optional

Method

  1. Heat a large sauté pan until medium hot. Add the oil and sausage balls and fry, stirring occasionally, until just golden brown.

  2. Add the onion and mixed herbs and cook for 2-3 minutes until just softened.

  3. Add the tomato soup and tinned tomatoes then refill the empty soup can with water and add 2 more cans full of water. Stir well and bring to a simmer.

  4. Add the spaghetti and stir well. Bring to the boil, then lower the heat to a simmer and cook for 15-18 minutes, stirring occasionally, until the pasta is tender and the sauce thickened.

  5. Season with black pepper and stir in half the basil.

  6. Divide between serving bowls and top with the last of the basil, and some grated cheese if you fancy it.
