Pancake Day Recipes - Crepe Suzette Cake

Ingredients

  • 600g light cream cheese
  • 100g icing sugar
  • 1 tbsp vanilla extract
  • 4 oranges
  • 10 ready made sweet pancakes/crepes
  • 50g roughly chopped walnuts

Method

  1. Tip the cream cheese into a bowl, sift the icing sugar over the top, then add the vanilla extract, zest and juice of two oranges and mix really well until smooth.

  2. Lay one pancake/crepe onto a serving plate, then spread a thin layer of the cream cheese mixture over the top, making sure you go right to the edges.

  3. Layer a second pancake on top then repeat with the cream cheese.

  4. Repeat until you’ve used all the pancakes and cream cheese, finishing with a layer of cream cheese.

  5. Peel the remaining oranges, and cut into segments.

  6. Pile the orange segments on top of the cake and scatter with the walnuts.

  7. Serve straightaway cut into wedges, or cover and place in the fridge for up to 3 days.
