Prawn And Rice Heart Parcels


  • 1 x Jack’s Microwaveable Pilau Rice
  • 2 spring onions, finely sliced
  • 1 lime, zested and juiced
  • ½ bunch coriander, roughly chopped
  • 1 x 120g Blue Dragon Sweet Chilli and Garlic Stir Fry Sauce
  • 180g Cooked and Peeled Frozen Prawns, defrosted
  • 80g tenderstem broccoli
  • 1 red chilli, seeded and sliced


  1. Tip the rice, spring onions, lime zest and half the sauce into a bowl.
  2. Mix together.
  3. Take 2 large square sheets of parchment paper.
  4. Divide the rice between the centre of the paper.
  5. Top with prawns and remaining sauce.
  6. Lay the broccoli alongside.
  7. Fold the sheet in half to cover the rice.
  8. Fold the sides over to seal the parcel.
  9. Microwave together on High for 4 minutes until piping hot.
  10. Cut the centre paper away.
  11. Squeeze the lime over the top, then scatter with coriander leaves and chilli.
  12. Serve straightaway.
