• 250g runner beans, sliced
  • 200g goats cheese - (Quality Food Award Winner)
  • 50g walnut pieces
  • 2 tbsp parsley, chopped
  • 2 tbsp olive oil
  • 2 tbsp White wine vinegar
  • Salt and pepper

  1. Bring a large pan of salted water to the boil and cook the beans for six minutes. Drain and refresh under cold water. Drain again and put in a large bowl.

  2. Add the walnut pieces over the beans and season well.

  3. Break the goats cheese into pieces and toss through the beans and nuts.

  4. Make a dressing by mixing together the olive oil and white wine vinegar. Pour over the beans and stir through with the chopped parsley.

  5. Serve with some freshly baked bread.
