Saint Agur Cheese and Plum Salad


  • 8 plums, stoned and halved
  • 1 red onion, cut into thin wedges
  • Freshly ground black pepper
  • 1 tbsp honey
  • 1 tbsp balsamic vinegar
  • ½ lemon, juiced
  • 2 tbsp olive oil
  • 60g rocket
  • 120g Saint Agur Cheese torn into chunks
  • 50g roasted and salted assorted nuts, roughly chopped
  • Crusty bread, to serve

  1. Preheat the oven to 220°C/fan 200°C/gas 7.

  2. Lay the plums onto a baking tray cut side up, then scatter the onion wedges around and season with black pepper.

  3. Place in the oven to roast for 20 minutes until slightly charred and hot through.

  4. Whisk the honey, balsamic vinegar, lemon juice and oil together in a bowl then season well with black pepper.

  5. Scatter half the rocket onto a serving platter then top with the roasted plums and onions. Scatter half the cheese and nuts over the top, then add the remaining rocket, cheese and nuts.

  6. Finish by drizzling the dressing over the top and serve straightaway with crusty bread.
