JACK's Sausage and Tzatziki

Ingredients

  • 1 x 600g pack Jacks Sweet Potatoes, scrubbed and pierced with a fork
  • 2 tsp vegetable oil
  • 445g Jacks Lincolnshire Sausages, skin removed and meat chopped
  • 100g pack Jacks Tzatziki
  • 30g Jacks Spring Onions, finely sliced

Method

  1. Place the sweet potatoes onto a kitchen roll lined heatproof plate.

  2. Place in the microwave for 15 minutes – check to see if they are tender by piercing with a knife. If there’s resistance, return to the microwave and heat for another 2 minutes then check again. Repeat until all potatoes are tender.

  3. Meanwhile, heat a frying pan until medium hot. Add the oil and chunks of sausage meat and fry for 4-5 minutes until golden brown and cooked through.

  4. Cut the sweet potatoes into 1.5cm thick slices and divide between serving plates.

  5. Divide the tzatziki between them, then top with the sausages and the last of the spring onions.

  6. Serve straightaway.
