Side Dishes Starters/Snacks Lunch/Dinner Serrano Ham Cups

Ingredients
- 1 pack Charcuti Serrano ham
- 4-6 cherry tomatoes, halved
- 50g Bettine Mild Goat’s cheese pearls
- 6 olives
- 6 flat leaf parsley leaves
- ¼ lemon, zested
Method
- Preheat the oven to 210°C, fan 190°C, gas mark 7.
- Gently fold the serrano ham into each hole in a 6 hole muffin tin.
- Roast for 15 minutes until crispy.
- Remove and allow to cool a little to firm up.
- Fill with the cherry tomatoes, goat’s cheese and olives.
- Top with parsley and lemon zest and serve.
