Smashed Potato Salad


  • 1 pack Jack’s baby potatoes
  • 2 tbsp olive oil
  • Sea salt and freshly ground black pepper
  • 200g sour cream
  • 125ml Pizza Express Ceasar dressing
  • 1 pack Jack’s spring onions, chopped
  • ½ pack Jack’s chives, finely chopped



  1. Cook the potatoes according to pack instructions.
  2. Preheat the air fryer to 200°C.
  3. Drain and squish with a potato masher until 1-2cm high.
  4. Toss with a little oil, salt and black pepper.
  5. Place in the air fryer to roast for 15 minutes until crispy.
  6. Tip the sour cream, Ceasar dressing, spring onions, chives, salt and black pepper into a bowl and toss together.
  7. Add the crispy potatoes, toss to coat and serve straightaway, or chill and eat cold.
