Lunch/Dinner Spicy Baked Eggs

  Ingredients
- 1tsp vegetable oil
- 1 small onion, finely chopped
- 1 garlic clove, crushed
- ½ red pepper, finely chopped
- ½ a mild green chilli, finely chopped
- 1 tin Euro Shopper chopped tomatoes
- 1 heaped tsp smoked paprika
- Salt and pepper
- 4 Euro Shopper eggs
- French bread to serve
Method
- 
	In a deep frying pan with a lid heat the oil, add in the fresh vegetables, garlic and chilli. Stir for a few minutes until the onions and peppers have softened. 
- 
	Tip in the chopped tomatoes, sprinkle with smoked paprika and season. 
- 
	Add 200ml of water and bring to the boil. Cook for 15 minutes until the sauce is thickened and looks slightly sticky. 
- 
	Carefully, so as not to puncture the yolk, crack the eggs into the hot tomato mix. Cover the pan with the lid or large plate and cook for a further 6 minutes until the white is set, but the yolks are still runny. 
- 
	Sprinkle the eggs with smoked paprika, salt and pepper. Serve straight away in the pan along with slices of toasted French bread for dunking.
