Side Dishes Starters/Snacks Lunch/Dinner Stuffed Sweet Potatoes

Ingredients
- 2 medium/large sweet potatoes, scrubbed
- 1 tsp olive oil
- Sea salt and freshly ground black pepper
- ½ pepper, seeded and chopped
- 1 spring onion, roughly chopped
- 20g baby spinach, shredded
- ½ block feta, crumbled
- 2 large eggs, beaten
Method
- Rub the sweet potatoes with olive oil and season with salt and black pepper.
- Pierce with a fork and bake in an air fry - 200°C for 20-30 minutes.
- Cut in half and mash the sweet potato down into the skins to form a boat.
- Fill each “boat” with the pepper, spring onion, spinach and feta.
- Crack the eggs into a bowl, season and beat well until smooth.
- Lay a sheet of foil into the air fryer.
- Lay the potatoes on top of the foil, then spoon the eggs over the top of the potatoes.
- Return to the air fry for 15-18 minutes until golden and set.
