Stuffed Sweet Potatoes

Ingredients

  • 2 medium/large sweet potatoes, scrubbed
  • 1 tsp olive oil
  • Sea salt and freshly ground black pepper
  • ½ pepper, seeded and chopped
  • 1 spring onion, roughly chopped
  • 20g baby spinach, shredded
  • ½ block feta, crumbled
  • 2 large eggs, beaten

Method

  1. Rub the sweet potatoes with olive oil and season with salt and black pepper.
  2. Pierce with a fork and bake in an air fry - 200°C for 20-30 minutes.
  3. Cut in half and mash the sweet potato down into the skins to form a boat.
  4. Fill each “boat” with the pepper, spring onion, spinach and feta.
  5. Crack the eggs into a bowl, season and beat well until smooth.
  6. Lay a sheet of foil into the air fryer.
  7. Lay the potatoes on top of the foil, then spoon the eggs over the top of the potatoes.
  8. Return to the air fry for 15-18 minutes until golden and set.
