Tomato, Basil and Mozzarella Salad - Summer Salad Recipes

Ingredients

  • 200g mixed tomatoes, sliced and chopped
  • ┬Ż small red onion, finely sliced
  • 2 tbsp extra virgin olive oil
  • 2 tsp white wine vinegar
  • Sea salt and freshly ground black pepper
  • 125g mozzarella, roughly torn
  • 1 small handful basil leaves

Method

  1. Lay the tomatoes across a serving plate and scatter the red onion over the top.

  2. Drizzle with the olive oil and vinegar and season with salt and black pepper then set aside for 30 minutes until the tomatoes are at room temperature.

  3. When ready to serve, scatter the mozzarella over the top and finish with a scattering of basil leaves.

  4. Serve straightaway.
