Tomato & Red Onion Spaghetti with Grilled Chicken

Ingredients

  • 350g spaghetti
  • 250g cherry tomatoes, whole
  • 4 skinless chicken breasts
  • 1 clove of garlic, finely chopped
  • 1 red onion, finely sliced
  • 2 tbsp balsamic vinegar
  • 2 tbsp olive oil
  • salt and pepper to season
  • 4 tbsp parmesan to to grate over the pasta

Method

  1. Bring a large pan of salted water to the boil for the spaghetti and cook for eight to ten minutes or until tender.

  2. Season the chicken and place under a preheated medium grill. Grill for five minutes on each side. Ensure the chicken is fully cooked. Remove and leave to rest for five minutes under foil for extra succulence.

  3. While the chicken is resting, heat the olive oil in a frying pan and add the chopped garlic and sliced onion. Cook for a few minutes until soft.

  4. Add the cherry tomatoes and season well. Pour in the balsamic vinegar and heat until bubbling. Leave to cool.

  5. When cooked drain the spaghetti. Add the tomatoes and onions and serve with chicken. Finish with a sprinkle of grated parmesan.
