• 900g chilled watermelon flesh, plus extra for garnishing
  • 150g chilled pineapple flesh
  • 300ml chilled coconut water
  • 60ml freshly squeezed lime juice
  • knob of ginger, peeled and finely chopped
  • crushed ice, to serve
  • mint sprigs, to garnish


  1. Cut the watermelon into cubes and place in a liquidiser. Add the pineapple, coconut water, lime juice and ginger. Blend until smooth then sieve into a large measuring jug. Fill a large jug with a handful of crushed ice and pour over the watermelon mixture. Stir and pour into glasses. Top with crushed ice. Garnish with a wedge of melon and a mint sprig.


For an alcoholic version add vodka.
